The quality of our curd is reflected in the cheeses that we make. We make our curd from the milk that we receive every day from local dairies. We pasteurize the fresh milk and then begin the careful process of curd making for all our cheeses.

We work the milk through various steps, until the curd has reached the level of consistency and quality that we require for all our cheeses. A system of checks and balances is in place throughout our facility to ensure that our cheese is made with the highest standards.
